The original image looks a bit better but once I save it to jpeg it looks like this http://gmhcreative.com/Horse_lowres.jpg
Any ideas of how to smooth out the gradient in the sky?

I'm starting to think that nothing's wrong with the photo, it's the limitations of my monitor. I'm using a MacBook.
I don't see a problem on my laptop but if you e-mail me the full size image, I'll take a look on my calibrated system.
The problem you think you're seeing can come from two issues. Either too much JPEG compression or your monitor isn't set to show enough colors. Or a combination of both. It's called stair stepping or banding.
I've been doing some more searching and reading. Looks like I need to find a good monitor to do photo editing.
If your laptop has an outlet interface (mini DVI) for a LCD display, that will probably help most effectively as a way to use your laptop to get decent quality control with digital photographs.
