I want to print some of my pictures as 8x10s. To do this, the picture gets cropped in a way that ruins the picture. I've tried using photoshop elements to change the image size to 8x10 so that my picture will not be cropped. This step only works on photos which I took using a point and shoot digital camera. I cannot find a way to get my digital rebel photos to the right size so that they are not cropped when I print them as 8x10s. Does anyone know what I can do?

You need to understand proportion and how to add canvas to your images so they print without cropping.

You cannot print a photo taken with a Rebel (or many other DSLR) in 8X10 without cropping. Printing 8X12 will not need any cropping.
