New to SLR's: can't decide between 2

I will be taking photography lessons and am really excited about adding photography to my other hobby, travel! I want a camera I can grow with and not have to repurchase any time soon. I've narrowed it down to the Nikon D80 and the Canon EOS Rebel XTi. I also considered the Nikon D40x for size and price but thought it would limit me too much. I won't do sports photos but may want the ability to freeze action or water. I want true color and great picture quality. Am I looking at 'overkill' with my top 2, or would the D40x be plenty for me?

Since I am inexperienced, it is difficult to decide based on the technical reviews since some of the jargon means little to me at this poing.

Thanks for any help you might be able to give!

Hi,
Any camera that is capable of giving you a shutter speed of 1/500 sec will freeze action and water; that is to say ANY camera made.
With digital photography, color is what you make it in an editing program, super saturated or none at all.
You can learn the jargon by getting a copy of Kodak's "Joy of Photography" at the library.
Also, www.nyip.com has some great free tips on subject specific pictures.

If you want a camera that you don't want to have to upgrade within a few years, eliminate the D40x from your choices. It only allows automatic lenses. Personally I'd go with the D80 only because I like Nikon better but I have heard more faults on the Canon camera that you posted opposed to the Nikon you posted.
