Miguel, one thing you could try: Sacrifice a roll of 120 film and cut it into "sheets" of the right length. That way, you only have to cut in one dimension. The downside is that the thinner acetate on Tri-X film might pose some problems in the holder. T-Max 100 might be a better choice - it has a 4.7 mil backing.

The danger of scratching can be minimized by placing a sheet of thin film acetate (or similar) on the cutter board, under the film. However, working in the dark, and doing things not intended to be done to film, always poses a risk.

Thanks, I'll use your suggestions to do a trial run to see how practical it turn out. the other issue will be processing I have a Nikkor adjustable stainless steel tank and a holder that is specifically designed for Hasselblad use have you any preference on how to best process the film ?

I would think the processing would be the same as for roll film, small tank, but I'd check the Kodak website's film data to be sure. Obviously, the agitation routine will be somewhat different!
