Canon 20D - is 72dpi only .JPG file size setting?

i just got the Canon 20D. trying to figure out how to change the .jpg file size - is that possible? i'm only getting 72dpi. do i have to shoot .RAW then convert?

Digital cameras do not capture at resolution. They only capture pixels. It's the program you use to open the image or the EXIF data that determines what you read in the image size dialogue.

Where are you reading 72PPI (pixels per inch)? In what program?
